I love getting several different uses out of just one simple recipe.
We use our all-purpose tomato soup for pasta sauce, pizza sauce, lasagne, zoodles, ratatouille, eggplant casserole, bean "meat" balls, stuff peppers, spaghetti squash, lentil bolognese, and more!
Another awesome note about this recipe is you can used canned or fresh tomatoes.
Common ingredients you most likely already have in your pantry make this a go-to household favorite of ours.
Takes only minutes to whip up in any blender and can be customized to your level of sweet/salty preference.

All-Purpose Tomato Soup [Easy]
[Makes 4-6 servings)
Ingredients:
2 – 14.5 oz cans of no salt added diced tomatoes (or 4-5 large ripe tomatoes)
1 cup vegetable broth
½ cup raw cashews (or 1/2 cup white beans)
1-2 pitted dates
2 cloves of garlic minced
1 small red onion chopped
1 tsp dried basil
1 tsp dried parsley
1 tsp dried oregano
3 tbsp nutritional yeast
1 tsp miso (or more to taste)
Black pepper to taste
Top with extra chopped fresh basil
Directions:
+Sauté onions and minced garlic until onions are translucent
(Use 1 tbsp from your vegetable stock to help sauté)
+Add in remaining ingredients along with sautéed onions and garlic to a high-speed blender.
+Blend until well combined.
+Transfer mixture into a soup pot and cook on medium heat until warmed.
+Stir miso into warm soup.
+Top individual bowls with dried basil and black pepper to taste.
