Set it and forget it!
In five hours on low, you can have this delicious thick burrito bowl perfect for a cozy Friday night meal.
Make our recipe your own by loading up favorite burrito toppings like - shredded lettuce, avocado, our sour cream recipe, or even extra salsa!
This recipe makes around 8 cups so if you have a big family this is an awesome meal or if you're like us - we love freezing any leftovers!

Easy Burrito Bowl - Slow Cooker

Makes around 8 cups
Ingredients:
1 small red onion diced
2 cups vegetable broth
1 -14.5 oz can fire roasted diced tomatoes
½ cup salsa
1 cup oat groats
1 – 15 oz can black beans (drained and rinsed)
8oz tempeh (optional) crumbled
½ cup corn
Our Taco Seasoning:
1 tbsp chili powder
1 tsp garlic powder
1 tsp onion powder
1 tsp smoked paprika
1 tsp cumin
½ tsp dried oregano
¼ tsp black pepper
Directions:
1. In a frying pan sauté onion in one tablespoon of vegetable broth or water over medium heat until onions are translucent.
2. Add in the remaining ingredients to slow cooker along with sautéed onions.
3. Mix well
4. Cook on low for 5 hours until oat groats are fully cooked.
5. Add toppings to your burrito bowl – our “sour cream”, extra veggies, shredded lettuce, or even avocado.
Change up the ingredients by adding in peppers, shredded soy curls, swap beans, or even a different whole grain.
