I have just the meal for you -- our easy chickpea salad!


This recipe takes only minutes to whip together, travels beautifully, and can be altered several different ways so that it never gets boring.

Easy Chickpea Salad

[Makes 4 servings]


Ingredients

1 - 15oz can of chickpeas, drained, rinsed, and mashed.

1/2 cup celery chopped

1/2 cup shredded carrot

1/2 cup red onion chopped

1/2 cup of your favorite oil-free hummus

1 tsp dijon mustard (optional)

1/2 cup of sliced red seedless grapes (optional)

1/4 cup of crushed walnuts (optional)


Ideas for your Chickpea Salad:

Lettuce Wraps

Whole Wheat Pita

Toasted Bread

On top of salad


Directions:

+Once your chickpeas are drained and rinsed - mash well in a large bowl.

+Add in all the ingredients including hummus

+Stir until well combined

+Enjoy on lettuce wraps, whole wheat pita, toasted bread, or in your salad!


+Refrigerate in a sealed container for up to 5 days.

I've been transitioning into WFPB since May 2020. Inspired by your delicious recipe I added Dolce, Nori and Sea Salt to my Chickpea Salad.
