Easy Chocolate Lava Cake for Two!

We are only a few days away from Valentine's Day!


I wanted to create a whole food plant-based dessert that was refined sugar free but still tastes like a rich treat. I always make sure our recipes are easy, simple, and healthy.


For all you chocolate lovers this one is for you. The perfect treat to share with a loved one or enjoy all on your own!

Easy Chocolate Lava Cake for Two!

[Makes 1-2 servings]

Ingredients

1/4 cup oat flour

2 tbsp aquafaba (chickpea liquid)

1/4 tsp vanilla

1 tbsp cocoa powder

1 tsp baking powder

3 tbsp date paste



Directions: +Mix together the dry ingredients

+Mix together the wet ingredients

+Add the wet ingredients into the dry and combined well

+Move batter into a .5 quart dish [Linked Here] or two small ramekins or oven safe baking dish.

+Add in chocolate chips to the center of the batter. Carefully mix push the chocolate chips down and have the batter cover the top.


+Bake at 375 degrees for 22 minutes


You want the cake batter to be cooked.

[However the center should be softer compared to the edges.]

I made this last night for Valentine's day. I did not have aquafaba so used some soy yogurt instead. I also put a tiny bit of vinegar to get a bit more rise. The result was fantastic- and we gobbled them up. My daughter , who felt the recipe was "a bit too healthy" had to admit that they were really delicious and quite indulgent. Thank you for your great recipes!!!

I made this tonight. It was delicious - so chocolatey! But there wasn’t any lava in the middle 😩 not sure what happened.
