Easy Sheet Pan Fajitas


I get asked all the time, what exactly do I eat? Well, this is one meal we pretty much at least once a week.


Our easy sheet pan fajitas is a quick meal to toss together and you can change up the ingredients so it never gets boring.


If you are focused on weight loss, I recommend serving the fajitas over a serving of whole grains along with your favorite greens.


Not focused on weight loss, corn tortillas, and adding shredded soy curls are a fun addition to dinner! *Just cook the dish at 250 degrees if you are using soy.


Play around with the ingredients - add in tomatoes or even cauliflower.

Change up the beans - pinto, kidney, chickpeas - the list goes on.


Mix up the toppings: our sour cream, salsa, hot sauce, nacho cheese sauce, etc.

Easy Sheet Pan Fajitas

Ingredients:
 
1 cup sliced mushrooms 
1 -15oz can of beans (drained and rinsed)  
2 medium peppers, sliced  
1 cup corn (frozen or fresh)
1 small onion, sliced  

Seasoning:

1 tsp chili powder 
1 tsp onion powder 
1 tsp garlic powder 
1 tbsp smoked paprika 
¼ tsp cumin 

Directions:

Preheat oven to 350 degrees.
Toss the seasoning mixture with sliced mushrooms, beans, peppers, onions, and corn. 

Spread out evenly on a baking pan lined with parchment paper. 

Bake for 15-20 minutes. 
Serve with corn tortillas, over a cooked whole-grain, or on a salad.

Notes: We like to serve this family-style with the fajita mixture in a large bowl, warmed tortillas, sliced lime, and making fun toppings such as our sour cream/guacamole recipe. You can also add in shredded soy curls the fajita mixture for a different texture and more protein.

If the "Print the Recipe Here" is a link, it is not working.... No biggie for me... I just downloaded the recipe and then printed the PDF.... Just thought you might want to check if it is a link or tweak the wording if you want users to download and print the PDF....
