Happy Friday Everyone!
Friday means the end of a workweek and an easy instant pot/slow cooker recipe.
This week we are using our beloved instant pot (3qt).
One of Marcs' favorite dishes his family makes is Lebanese Lentils & Whole-Grain (Mujadara). I've figured out a way of keeping all the flavor while being a SOS-free whole food plant-based dish. Plus we pretty much just throw the ingredients into an instant pot, set it, and forget it! Friday night dinner is finished.

Lebanese Lentils & Whole-Grain (Mujadara)
Instant Pot

Ingredients:
1 medium onion chopped
½ cup dry lentils (green or brown)
¾ cup whole grain (bulgur wheat, farro, or rice)
1 ¾ cup vegetable stock
½ cup hummus
1 tsp cumin
1 tsp coriander
Garnish with dried parsley
Directions:
Sauté onions in instant pot with 1-2 tbsp of vegetable stock until translucent.
Add in dry lentils, whole grain, remainder of vegetable stock, hummus, cumin, and coriander. Stir together well.
Set instant pot to sealing – High pressure for 6 minutes.
Let the instant pot release naturally (until the pin drops).
Use a fork/spoon to fluff the dish.
Garnish with dried parsley and serve with your favorite veggies!

Super delicious! As a high vibration person, I seek healthy foods or alternatives to less healthy foods I used to ead. Lebanese lentils also make you feel full quickly.
Love this recipe. Made it a few times. I chop up a cauliflower and pop that in too. Good way to add in veggies!
I made this last night. I doubled the recipe and used bulgur. I first made the Lemony Hummus from the How Not to Die Cookbook and used it. I love the ease of sauteing the onions in the IP and cooking everything together. It's so good!
I love this recipe! Made it twice and will double it next time. Made it first time with bulgur and it was a little dry. Second time I made it with a brown and wild rice mix and a little more liquid (IP adjusted to 12 minutes for the rice) and it was heavenly. Will continue with some other grains. It is a household favorite. Thanks so much!
OMG! So GOOD! Hubs and I switched to WFPBSOS Free in June and I'm still having trouble adapting to the new flavors, but I have to tell you that this recipe was LOVE at first bite! I am loving your recipes. A few months ago I tried your Red Lentil stew with potatoes and carrots etc., and that is now on our meal rotation. Thank You!
