Nourish Cookbook - Cashew Pear Cream [+ Giveaway!]


This month I will be featuring the book: Nourish The Definitive Plant-Based Nutrition Guide for Families by Reshma Shah M.D. M.P.H. and Brenda Davis R.D..


One of my absolute favorites that has so much valuable information and delicious recipes. A must-have for anyone wanting to get the entire family on a plant-based lifestyle.


I can't wait to show you a few of my favorite recipes from Nourish and in today's video give you a chance to win one!

For today's video, I shared the Cashew Pear Cream from page 390 of Nourish The Definitive Plant-Based Nutrition Guide for Families.


I also included a nut-free pear cream for those who may be trying to lose weight or have a nut allergy.

Nut Allergy Pear Cream Adapted Recipe

Ingredients:
3 pears chopped 
1 cup white beans (rinsed and drained) 
1 tsp vanilla extract 
Directions: 
Blend together all ingredients in a high-speed blender until smooth. 

Store in the refrigerator. 

Wonderful on pancakes, waffles, oatmeal - or anything you'd use whipped cream on! Also can be a great applesauce replacement. 

The recipe from the cookbook does contain raw cashews which makes the pear cream a similar color and texture to whipped cream.


I'd recommend using it for the cashew version kids or family members who you may be transitioning to more plant-based recipes. However, both recipes are delicious!


We always use fresh ripe pears instead of a jar/can of pears --however either work!
