For today's video, I shared Taco Night from page 368 of Nourish The Definitive Plant-Based Nutrition Guide for Families.
Who doesn't love a taco? What about a very easy-to-make taco? Well, this recipe is for all my friends who also love both! I especially love making this meal when I need a "break" from recipe testing and just want something quick.
The tofu taco crumbles mixed with beans and all the veggies is the perfect taco combo in my opinion. Serve with salsa, scallions, and our sour cream recipe - you've got yourself a winner!
Great on a corn tortilla, lettuce cup, or over any whole grain!
We always change up the vegetables so it never gets old - try it with shaved Brussel sprouts (it's fantastic!).
