Three Ingredients: Whole Food Plant Based Cracker [Gluten Free/Oil Free]

Need an easy, fast, and simple whole food plant-based cracker?


You can make this recipe with any whole grain you already have!


Which is one of the reasons I just love making these.


Rice, farro, millet, quinoa .. you name it and you can have whole food plant-based crackers (or even a thin pizza crust!)

Whole Food Plant Based Cracker

Ingredients:

1 1/4 cup whole grain (millet, quinoa, oat groats, farro, rice - any whole grain!)

1 cup water

(You may need to add a bit more if your blender has trouble - Add 1 tbsp at a time)

Seasoning


Directions:

+Blend the water and whole grain until smooth

+After you've blended pour onto parchment paper

+Smooth batter out evenly

+Sprinkle on seasoning

+Bake at 350 degrees for 25 - 40 minutes

If you want a crispy cracker make your batter thin and bake for 25 minutes

If you want a softer cracker make your batter thicker and bake for 40 minutes


*This also makes a wonderful thin pizza crust- bake for 30 minutes at 350 degrees, add tomato sauce and toppings - bake for 5-10 minutes more*






Seasoning Ideas

Everything Bagel Seasoning

Garlic powder, onion powder, nutritional yeast

Chipotle

Thai - Basil, Cumin, Garlic, Ginger, Turmeric, Cardamom, Curry Powder

Cajun - Cayenne Pepper, Oregano, Paprika, Thyme, Rosemary

French - Nutmeg, Thyme, Garlic Powder, Rosemary, Oregano, Herbes De Provence

Caribbean - Allspice, Nutmeg, Garlic Powder, Cloves, Cinnamon Ginger

Mediterranean - Oregano, Rosemary, Thyme, Cardamom, Cinnamon, Cloves, Basil

I ordered some "12 grain cereal" on line and decided to try your cracker recipe with the mixture. The mixture of whole grains included some ground grains, so technically it was not "whole" but a lot healthier than purchased crackers! They came out GREAT! I loved the crunchy texture. Instead of sprinkling the bagel seasoning on the top, I blended it into the batter. I think pizza crust will be next. Thank you so much for the simple recipe! This will be a regular addition to our WFPBNO meal plans!

These were so easy and I love the Everything but the Bagel seasoning. Next time I will make them a little thinner because I love crunch! I had a little laugh bc when I was cutting them up it reminded me of the time we made hard tack at home with my homeschooled child!

I don't know about the cracker version, but what a fantastic and easy pizza crust. Oh how I missed pizza because I was too lazy to make a crust. HOWEVER, with summer coming upon us and the thought of a gas oven raging in the heat - does anyone have any thoughts on how this recipe might fare being 'baked' on a panini press? I just can't bear the thought of lighting the oven in the summer. Thanks !!!
